Yakhni Pulao Recipe

Ingredients : 

- Mutton 1 kg

- Onion 2 slice

- Ginger Julian 1 tbsp

- Black pepper 20

- Cloves 10

- Cinnamon 2 inch piece

- Black cardamom 2

- Small cardamom 2

- Garlic 1 pod

- Salt 1 tsp heaped

- Anise seeds 3 tbsp

- Coriander whole 4 tbsp

- Water 8 cups

- Ingredients column II

- Oil ¾ cup

- Rice 750 gm soaked

- Black cardamom 2

- Cinnamon 1 inch stick

- Cloves 6

- Black pepper 6

- Ginger garlic 1 tbsp heaped

- Chili powder 1 tsp

- Green chili grinded 1 tsp heaped

- Brown onion ¾ cup

- Salt 1 ½ tsp

- Yogurt 1 cup heaped

Method : Make a spice bag with Onion 2 slice, Ginger Julian 1 tbsp, Black pepper 20, Cloves 10, Cinnamon 2 inch piece, Black cardamom 2, Small cardamom 2, Garlic 1 pod, Salt 1 tsp heaped, Anise seeds 3 tbsp, Coriander whole 4 tbsp add in a pan with mutton and 8 cups of water, cook till mutton nearly done and 4 cups stock left, heat oil add whole spices in column II with ginger garlic paste, fry well by adding little little water then add all the seasoning with brown onion and yogurt, fry well, add boiled mutton, cover and cook for 10 minutes, then add left over stock, when stock boiling add soaked rice, cook on medium flame for 10 minutes then lower heat, cook for 15 minutes till done.
