Prawn Massaman Curry

Ingredients :

- massaman curry paste 1-2 tbsp 

- coconut milk 1 x 400g tin

- small new potatoes 150g, halved or quartered if large

- cinnamon stick 1

- cardamom pods 2, squashed

- raw king prawns 200g (frozen are fine)

- brown sugar 1 tsp

- limes 2, 1 quartered to serve

- fish sauce 1 tbsp

- peanuts 1 tbsp, toasted and chopped (optional)

- red chilli and basil shredded to serve

Method :  Cook the massaman paste within the thick little bit of the coconut milk for a couple of minutes until it becomes fragrant. Add the remainder of the coconut milk and simmer for a moment. Add the potatoes, cinnamon, cardamom and simmer for 15-20 minutes until the potatoes are tender. Add the prawns, sugar, juice and fish sauce, and cook for 3-4 minutes until the prawns are just cooked and pink. Serve the curry sprinkled with lime wedges, peanuts (if using), chilli and basil.
