Spinach, Egg and Cheese Breakfast Warp

Ingredients : 

- 1 tsp olive oil

- 5oz fresh baby spinach, chopped

- 4 large eggs

- 4 egg whites

- Salt and pepper, to taste

- ½ cup shredded cheddar cheese

- 4 whole-wheat tortillas, toasted

Method : Heat vegetable oil during a nonstick skillet over medium-high heat. Add spinach and cook, stirring, until wilted, about 3 minutes. Whisk together eggs and egg whites during a bowl . Add mixture to skillet and cook until eggs are cooked through. Season with salt and pepper to taste. Place egg mixture within the center of every tortilla, and sprinkle with cheese. Fold in half and serve warm.
